In another bowl, whisk together the flour, baking soda, and salt.
Now stir the dry ingredients in with the butter mixture. A soft dough ball will form.
Divide the dough into two or three segments. Use food color to color each segment by stirring it in.
Prepare the sprinkles by adding them in a bowl with half a teaspoon or more of edible glitter. Mix them together so the sprinkles get coated in the glitter.
Create dough balls from the segments, so each cookie will have a few different colors.
Then roll the dough balls in the sprinkles and place on a baking sheet lined with parchment paper.
Bake at 325°F (163°C) for 10-11 minutes. Allow to cool before eating.
Notes
You can buy unicorn sprinkles or make your own by mixing together different kinds of sprinkles. This recipe makes around 24 cookies. If you want, you can cut this recipe in half to make a smaller batch OR freeze extra cookie dough to make later. If you ever wonder if you can easily cut a recipe in half, look at the number of eggs.
